As the basis for our sparkling wine, we chose the excellent quality of the "Grüner Veltliner from the Hochleiten vineyard ", which was harvested on October 8th, 2020 and bottled for bottle fermentation on October 14th, 2020. With a whopping 21°KMW and 7.5 g of acidity, the must provided optimal conditions for its further development...
Our sparkling wine is created using the most original method: In contrast to the second fermentation in the bottle that is common today, in order to maintain the popular tingling sensation, we bottle still fermenting "Sturm" and let it build up the pressure with the first fermentation.
... not only means that the grapes were picked and sorted by hand, but that every step of the process, from extracting the must after clarification through sedimentation, to filling the bottles for the remaining fermentation, was carried out without the use of pumps. - This ensures excellent quality!
Incidentally, our sparkling wine is also disgorged using the old traditional method (dégorgement à la volée), without any technical aids such as freezing the bottle necks, which better preserves its character. This can lead to a small yeast residue that settles at the bottom of the bottle... - Please always store the bottles upright or refrigerate them.
Since we can produce our sparkling wine on a small scale, each bottle is individual, like the people who drink it. We don't disgorge huge quantities in reserve because once a sparkling wine is disgorged, it wants to be drunk as soon as possible. That's why we decided to also indicate the aging period on the bottle.
